Vittersø har vært del av og ledet arbeidspakker i flere store, internasjonale prosjekter finansiert av H2020 og Horisont Europa, knyttet til bærekraftig forbruk, matsystemer og økologisk landbruk, blant annet prosjektene Strength2Food, OrganicPLUS, ImprovAFish og ERA-prosjektet FOOdIVERSE.
